Egg Blossoms

My husband leaves at 6:00am to catch the train and I always make him a nutritious breakfast to take. These “Egg Blossoms” are an ideal grab and go meal. Can be eaten warm or cold. Packed with protein.

Phases 1+2 for dinner      Phases 3+4 any meal.

I make 12 at a time.

Ingredients:

12 eggs

Chopped Mushrooms

Chopped Spinach leaves

Chopped Tomatoes

Chopped Asparagus

Chopped Red or Green peppers.

Chopped Green Onions

Salt + Pepper to taste

Choose all of these vegetables or just the ones that you like.

Preheat the oven to 350. Spray the muffin tin with olive oil or a cooking spray.

Scramble each egg before putting it in the muffin cup.

Add the vegetables to each cup and season with salt + pepper.

Bake for 20 -25 mins.

A delicious, portable meal for the whole family.
